The Menace of a High-Fat Meal

How much can it really hurt to occasionally splurge on some fat-packed cheeseburgers and a mess of fries? Recent studies suggest that for people with heart disease, such lapses might actually be lethal.

Most people interested in a healthy diet aim to get no more than 30 percent of their daily calories from dietary fat. A high-fat meal can be balanced against a low-fat meal, so long as the average stays down. But it now appears that people with heart disease need to stick to their low-fat, low-cholesterol regimen at every meal.

One study, conducted on healthy individuals with normal cholesterol levels, found that eating a single high-fat meal can narrow arteries and decrease the flow of blood to the heart for two to four hours after eating. Other research discovered that high-fat meals boost the level of a natural blood-clotting substance. The result: an increased risk of heart attack or stroke.
